Production area: rural area of ​​San Donaci and Messagna, in the province of Brindisi

Harvesting: Manual harvesting is carried out in the early hours of dawn, when the ambient temperature is more moderate, preserving the freshness and aroma.

Winemaking: The grapes are destemmed and fermented in steel at a controlled temperature of 22-24 ° C for 8-10 days; during fermentation, selected yeasts are used and daily pumping over. Malolactic fermentation takes place immediately after.

Maturation: 5 months in steel and 1 month in bottle

Alcohol content: 14%

Tasting Notes: Intense ruby ​​red color with violet reflections. Pronounced aromas of red fruits, mainly strawberries and raspberries. Full and balanced on the palate with good freshness, lively tannins and a pleasantly persistent finish.

Wine / food pairing: well-seasoned or seasoned starters, roast meats, game and cold cuts.
