Grape variety: Primitivo
Denomination: Primitivo di Manduria DOC. Located on the Murge de Taranto, Manduria is known as the city of Primitivo; was founded by the Messapi, an ancient civilization of Illyrian origin who began cultivating grapes as early as 2000 BC. This ancient wine heritage is perfectly reflected in the PDO denomination Primitivo di Manduria, one of the most prestigious recognitions of Salento, which guarantees a wine with excellent structure and body, an important alcohol content and an intense bouquet, which remains for a long time. in mouth. and reminiscent of ripe fruit under the intense sun of Salento.
Production area: rural area of the towns of Manduria and Sava, in the province of Taranto
Harvest: manual harvest, usually in the last ten days of August. We work in the early hours of dawn and the bunches are quickly transported to the cellar, avoiding the high temperatures of the time which could reduce the freshness and aroma of the wine.
Winemaking: The grapes are destemmed and fermented in steel tanks at a controlled temperature of 25 ° C.
Aging: 6 months in American oak barrels and 2 months in steel tanks
Alcohol content: 14%
Tasting Notes: Intense ruby red color; pronounced bouquet of ripe cherries and black cherries, with hints of dried fruits and hints of coconut and chocolate; sweet and salty attack, an important and balanced center in the mouth, with enveloping and velvety tannins. Persistent finish of dried figs and overripe fruit.
Wine / food pairing: roasts, game and wild mushrooms; first dishes that use sauces and well-seasoned foods.
Serving temperature: oxygenate and serve at 18 ° C
