Carnaroli risotto with radicchio and porcini mushrooms

Tips for preparation:
Bring 1.5 l of water to a boil. In another pan, heat 2/3 tablespoons of olive oil or 2/3 knobs of butter, toast the rice for about a minute, stirring constantly. Add salt and white wine to taste, stir for a few seconds and add the boiling water. During cooking, occasionally turn and add boiling water a little at a time until cooked and matured preferred (16-18 minutes). Serve with the addition of grated Parmesan.
