Production area: rural area in the province of Brindisi
Harvesting: the harvest is carried out in the early hours of dawn around the first ten days of August, to avoid the high temperatures typical of the period and preserve the freshness and aroma of the two vines
Winemaking: soft pressing of the whole bunches, for a delicate aromatic extraction. This is followed by cold static clarification and fermentation at a controlled temperature with selected yeasts. The second fermentation takes place in January-February, with a refermentation of the wine in autoclave (Charmat method) for about 20 days. In this phase, carbon dioxide is formed which gives the wine its sparkling characteristicMaturation: 3 months in steel tanks
Alcohol content: 11%
Tasting Notes: straw yellow color with greenish reflections, fine and resistant perlage; intense aromas of white flowers, green apple, pear and citrus. Fresh taste, rightly acid and harmonious. The lively and effervescent energy of the bubbles and aromas make it persistent and pleasant.
Wine / food pairing: aperitifs and appetizers, fish and shellfish dishes, young cheeses and vegetables. Also good with desserts with adequate acidity, such as cheese cake and fresh fruit-based preparations.
