Grape variety: Negroamaro. Salento bubbles, produced using the Charmat Method starting from the main vine of Salento winemaking, Negroamaro, are the perfect answer to other more well-known Italian sparkling wines. It is a pleasant and versatile product, which lends itself to consumption not only on traditional festive occasions, but at any moment of vivacity and in combination with numerous dishes, especially those derived from the Apulian tradition.
Production area: rural area of San Donaci, province of Brindisi
Harvesting: he grapes are harvested in the early hours of dawn of the second decade of August, when it is not yet fully ripe; the clusters are sent quickly to the cellar where they are de-stemmed
Winemaking: The crushed grapes are cooled to 12-14 ° and sent to a pneumatic press. We then proceed to the pressing and cleaning of the must through a static decantation which lasts 18-24 hours. Alcoholic fermentation lasts 10-12 days at a controlled temperature of 15-16 ° C. Filtration is carried out almost immediately after finishing the fermentation
Alcohol content: 11,5%
Tasting Notes: Pale pink color, fine and persistent perlage; delicate scent of wild berries, strawberry and raspberry; very fresh in the mouth, with the right acidity that balances its savory and soft taste. Long and fresh finish of red fruits.
Wine / food pairing: fish appetizers, slightly seasoned charcuterie, pasta with seafood, shellfish, white meats, local vegetables, Salento frisa; desserts, dry pastries and creamy preparations with good acidity, such as cakes and cheesecakes.
