This traditional balsamic vinegar from Modena can be considered as one of a kind, because Acetaia Guerzoni has always used only organic and biodynamic grapes. It comes from cooked musts acetified and then aged only in barrels, all rigorously different from each other both in essence and in size; in this company, thanks to a biodynamic derivation scheme according to which each barrel is linked to a planet of the solar system (Moon-Cherry, Venus-Acacia, Mercury-Mulberry, Sun-Ash, Mars-Oak, Jupiter-Maple or Chestnut, Saturne-Juniper or Chestnut It follows an absolutely particular maturation course, for 12 years, which gives it incomparable properties and aromas.
