La Colomba: this must-have pastry in Italy for Easter actually has fairly recent origins.

ColombeIndeed, it was Dino VILLANI (1898-1989), a brilliant Italian advertiser who worked for the Motta company in particular, who had the idea in the 1930s to use the same machines and the same pasta as the Christmas panettone, and to create this "Easter Panettone" which will be stylized in the form of a Dove and which will bear this name.

La Colomba quickly established itself on Italian tables and enjoyed the same success abroad as Panettone.

Success which Villani did not remain a stranger to because he was, with the journalists Orio VERGANI (1899-1960), among the founders in 1953 of the Accademia Italiana della Cucina, in other words the Italian Academy of Cookery which aims to promote Italian cuisine.

The Colomba comes in several flavors, starting with the Classica with a soft dough and candied oranges and with an almond glaze. And there are also other flavors such as Chocolate Doves, Peach & Apricot, etc

Finally, like any real artisanal product, the Dove is only found on the shelves two to three weeks before Easter and one to two weeks after.
