Grape variety: Primitivo
Denomination: IGP Salento
Production area: rural area of Manduria and Sava, in the province of Taranto.
Harvesting: Harvesting is done manually, generally in the last ten days of August. In the early hours of the morning the grapes are collected and transported with particular speed to the cellar, thus avoiding the sultry heat of the Salento days
Winemaking: After harvesting, the grapes are pressed and rested in a short cold maceration of 5-6 hours. The extraction of delicate aromas and flavors of rose wine become an absolute priority before soft pressing. Fermentation follows at a controlled temperature of 15-16 ° C
Maturation: 3 months in steel tanks
Alcohol content: 12,5%
Tasting Notes: Cherry pink color with luminous reflections. The nose recalls crunchy hints of flowers and red fruits such as cherries and raspberries at the beginning of ripening. From the soft sip it offers a calibrated freshness that brings to a pleasant finish and evident fruit.
Wine / food pairing: A rosé like Primitivo becomes a touch of refined rusticity when combined with the typical friselline of Salento. Ripe red cherry tomatoes, seasoned with good Apulian extra-virgin olive oil, enhance the aromaticity of a dish that is as simple as it is tasty. Salmon and potato croquettes, battered vegetables and mixed aperitifs are a unique pleasure for the senses. A good first course? Trofiette mare e monti with cherry tomatoes, shrimps and mushrooms are the exaltation of Mediterranean cuisine.
Serving temperature: 10 - 12 ° C in large glasses that favor the maximum olfactory expression
