Harvest: The grapes from the … Riserva project are among the most sugary and maintain a high level of quality even in the less favorable years. The harvest of these grapes is carried out by hand in boxes of 20 kg each.

In the cellar: Maceration takes place in vertical winemakers with leaching programming and temperature control. The must is fermented with indigenous yeasts with approximately eight to ten days of maceration.

Refinement: Refinement until malolactic closure takes place in stainless steel tanks. Once the malolactic fermentation is completed, it is aged for at least 18 months in medium-large oak barrels, while only a part is aged in small 225-litre French oak barrels. Its evolution continues with subsequent refinement in the bottle.

Sensory characteristics: The wine is brilliant, with a ruby red color with light orange reflections. It has an intense, ethereal, spicy scent. In the mouth it is soft, with light and sweet tannins, very persistent.

Pairings: Charcuterie boards, grilled and baked meats, first courses with very structured sauces.
