Grape variety: Negroamaro (85%) is one of the native vines included in the denomination. It is defined "Riserva" for a wine subjected to at least 2 years of maturation, during which it is aged most of the time in barrels or in wooden barrels which increase its structure and its complexity, making the tannins more elegant and supple. . The PDO Salice Salentino denomination, one of the most important in the region, in its Riserva version is probably the most coveted by Negroamaro lovers.
Denomination: Salice Salentino PDO Riserva
Production area: rural area of Salice Salentino, between the provinces of Brindisi and Lecce (Apulia)
Harvest: the harvest is manual and takes place in the early hours of dawn, when the lowest temperatures help to preserve the freshness and aroma of the grapes; the bunches are placed in boxes of about 5 kg, to preserve their integrity, and quickly brought to the rooms where the vinification will take place, thus avoiding unwanted maceration or fermentation.
Vinification: the grapes are destemmed and fermented in steel at a controlled temperature of 25 ° C for 8 to 10 days. Maceration on the skins lasts 12-15 days with pumping over and gentle pressing of the marc.
Aging: 12 months in French oak barrels, 6 months in large oak barrels, 4 months in steel and 4 months in bottle.
Alcohol content: 13.5%
Tasting notes: ruby red color with garnet reflections; elegant and intense aroma of wild berry jam, black pepper, licorice and vanilla; round and ample, harmonious, with velvety and enveloping tannins. Persistent finish of jam and spices.
Wine / food pairing: important starters, roast meats and game, mature cheeses with an intense taste; well seasoned risotto.
Serving temperature: oxygenate and serve at 18 ° C
