From selected Trebbiano and Sauvignon Blanc grapes dried on racks for about two months, this wine with unique characteristics is born. The pressing of the grapes in December and the fermentation in Allier oak barrels make it an excellent meditation wine, extremely versatile.

Denomination: Bianco Toscana IGP
Production area: estate of Torre a Cenaia Antica Tenuta Pitti, province of Pisa, Tuscany
Harvest: Sauvignon Blanc in the first week of September; Trebbiano in September
Vinification: The very ripe grapes are naturally dried on racks; de-stemming, crushing, fermentation and aging in Allier oak barrels
Aging: In Allier oak barrels for 12 months, then 6 months in bottle
Tasting Notes: Amber color, complex aroma rich in honey and almond notes, with obvious notes of raisins. Enveloping flavor, soft, velvety, with remarkable persistence
Wine / food pairing: This is a meditation wine, ideal for sipping after meals and capable of expressing its best with desserts and dried fruits, mild and blue cheeses. Perfect with foie gras.
