Production area: rural area of ​​San Donaci, in the province of Brindisi

Harvesting: Manual harvesting in 10 kg crates is carried out in the early hours of dawn, to prevent the high temperatures at the end of summer from adversely affecting the freshness and aroma of the wine.

Vinification: Destemming, fermentation at a controlled temperature of 22-24 ° C for 8 to 10 days, during which a daily pumping-over is carried out. Spontaneous malolactic immediately after alcoholic fermentation

Maturation: 5 months in steel and 1 month in bottle

Alcohol content: 14%

Tasting Notes: Brilliant ruby ​​red color with purple reflections; Intense aroma of cherry and black cherry with spicy undertones. Sweet and salty attack, good body and enveloping tannins, well balanced with a persistent finish.

Wine / food pairing: starter based on tomato sauces, red meats and game; appetizers of cold meats and matured cheeses, forest mushrooms and grilled vegetables.
