Harvest: Last ten days of September, first ten days of October.

Vinification: Destemming - gentle pressing, maceration of the grapes at controlled temperature for 10 days, fermentation at controlled temperature in vitrified cement vats for 15 days

Aging: Aging on noble lees for 4 months, then 2 months in bottle

Tasting Notes: Straw color with golden reflections. Intense and persistent bouquet, fruity with hints of apricot and peach, accompanied by notes of thyme and sage. Taste with good structure, tasty, fresh.

Wine / food pairing: Excellent as an aperitif, it goes well with seafood, white meats, cold meats, raw fish, cheeses, mushrooms and truffles
