Harvest: Syrah: first decade of September; Cabernet Sauvignon: mid-October

Vinification: Pre-fermentation and cold maceration, fermentation in vitrified cement vats at controlled temperature for 20-25 days. Malolactic fermentation in vitrified cement vats

Ageing: A part in vitrified cement vats and a part in Allier oak heated barrels for 12 months, then refining in the bottle: 12 months

Tasting Notes: Ruby red color with coral highlights and purple hues. Intense, persistent and complex aroma, characterized by fruity aromas, especially blackberry and blueberry, spicy notes and aromatic herbs. Well structured and elegant taste, initially soft and with an articulate progression and a long finish. Silky and thick tannic texture. On the palate, spicy and fruity aroma

Wine/food pairing: It goes well with roasted and grilled meats, game meats, mushrooms and aged cheeses.
