Recipe Minestra with Vegetables and Risini

Minestra

Ingredients for 4 persons :

  • 1 leek
  • 4 small potatoes
  • 5 small carrots
  • 1 stalk of celery
  • 4 small potatoes
  • 5 fresh mushrooms (optional)
  • 1 glass of Risini Maiella* (approx 100gr)
  • Riserva del Mare coarse salt*
  • A pinch of Oregano Etimo*
  • 1 bay leaf
  • 1 shallot
  • 1 clove of garlic
  • 1 L of water
  • Pepper

Minestra

  1. Peel and wash the potatoes and cut them into cubes.
  2. Peel and wash the carrots and cut them into cubes
  3. Peel and wash the leek and cut it into slices about a centimeter thick
  4. Peel and wash the celery stalk and cut it into strips
  5. Clean the mushrooms and cut them into 4 or 6 or into strips according to your preference
  6. Peel the garlic and cut it in half, removing the germ, peel the shallot and cut it into 4
  7. Put all the vegetables in a saucepan, add the water, the bay leaf and a pinch of Etimo oregano, as well as 1 – 2 pinches of Riserva del Mare coarse salt and cook over low heat for 20min
  8. Remove the bay leaf, add the Risini Maiella and cook for 5-6min
  9. At the end of cooking add a grind of pepper (to your taste) and serve

My gourmet advice: add a pinch of parmesan to each plate on the minestra.
